Hearty Mediterranean Pasta

Not only is this delicious pasta dish easy to make, it can be made in under 30 minutes. Its base ingredients go well with many types of meat or fish, but it is best with a spicy or mild Italian sausage.

Ingredients:

3 large Italian sausages (mild or hot)

1 chopped onion

4 garlic cloves finely chopped

1 can diced tomatoes

1 small can of sliced ​​black olives

1/3 cup extra virgin olive oil

1 can of unmarinated artichokes (optional)

Salt and pepper to taste.

1 package of fresh tortellini

Start by boiling a large pot of water and boil the Italian sausage for about 5 minutes or until cooked. Once cooked, remove the sausages and let cool for a few minutes. Put the water back in the large pot, bring it to a boil, and then start cooking the tortellini.

Cut the sausage into small 1/2-inch-thick discs and place in a large skillet and cook until golden brown on both sides. Remove the sausage and discard the fat.

In the same skillet, sauté the onions and garlic until tender, then add 1/2 cup of the vermouth and boil until the vermouth has reduced approximately by half. Add the can of chopped tomatoes, black olives, and 1/3 cup of olive oil. Cook for about 5 minutes and then add the artichokes (they should be quartered).

Finally, drain and add the tortellina and serve!
